Easy (and Clean!) Chicken Stir Fry

I don't know if it's just me, but I feel like I go through cooking slumps. This is one of those weeks. I enjoy cooking healthy meals for us, but there's just moments where none of my usuals sound good. Or I'm missing an ingredient.

So last night when absolutely nothing sounded good, I decided to throw a stir fry together. The best thing about making a stir fry is really anything goes! As long as you are using fresh ingredients and healthy oils it will be clean, too, which is really important to the fitness challenge I am doing right now. I thought I'd share with you the quick meal I made last night! 


Ingredients:
2 chicken breasts, cut into cubes
1 medium onion, diced
1 large bell pepper, cut into bite size pieces
Carrots (I was out but they would have rounded it out well) 
Garlic 
Ginger, to taste
Splash of soy sauce 
Olive oil to coat pan 

1. Heat large pan with olive oil over medium heat. 

2. Add chicken and veggies to pan. Season with garlic, ginger, and pepper. For me, the more ginger the better! 

3. Add a splash of soy sauce, just enough to give it some flavor. 

4. Cook until chicken is hot and not pink. Serve over rice or even alone. 

It's really so easy and it's a great way to get a healthy meal on the table quickly.
