Mushroom Burger and An Update

I'm on the third week of the No Excuse Mom 12 week challenge, and let me tell you, this has probably been the hardest week for me to get my workouts done. I started with allergy-like symptoms last week that developed into a sinus infection and slight bronchitis and it's just been miserable. On top of that, Juliet is cutting her two top teeth and has three others still coming in so we haven't slept much. 

This is one of those weeks where what I eat is really, really important. Just getting through my first few workouts this week has been miserable, so I know that what I eat will make or break what I'm doing this entire week. 

One of my go-to meals for lunch lately has been a grilled portabello mushroom "burger." It's so simple, it's delicious, and it's so easy! 

1 large Portobello mushroom
Garlic Powder, to taste
Salt and Pepper, to taste
2 slices of bread (or a bun) 
1 Leaf Romaine Lettuce 
1 slice tomato
1/2 avocado or mayonaisse

1. Wash mushroom, dry, then coat in seasonings to taste. 

2. Place mushroom on grill. I use my George Forman grill because it's the easiest for me to do quickly. 

3. Grill mushroom for about 10 minutes. Toast bread. 

4. Spread avocado on each slice of bread, using it as a butter or mayonnaise. (Picture shows mayonnaise, prior to my clean eating)

5. Place mushroom on bread with lettuce and tomato. Sometimes I also add some spicy brown mustard.

Enjoy with a yummy salad. You will be dying to eat this again. The best part is, there's very few calories but it's still a very satisfying meal.
